Hunters off the edge
If there's a huge drop down to the ground (like when you first Hunters in 'The Truth and Reconciliation', or on the icy bridge in 'Assault on the Control Room'), the best challenge with a Hunter has to be this. Lead him towards the edge. When you're right at the edge, sidestep his final swipe and watch him plummet to his death. Excellent!
If there are two of them at once, your footwork had better be extra fancy; but yes, it's quite possible to make them both go off the edge one at a time. You might even make them go off simultaneously; but you'll probably need a lot of perseverance to achieve that.
